Taste the Rainbow!

Taste the rainbow with a colorful fruit platter.  This platter is healthy and cute!  It’s a super fun way to serve fruit and is a hit in my house year round.

For the colors of the rainbow:

 

Red: Strawberries cut in bite size pieces

 

Orange: cantaloupe, pineapple chunks, or banana slices

 

Yellow: honeydew melon, bite size pieces, or green grapes

 

Blue/purple: blueberries, purple grapes

 

White marshmallows

Pink Popcorn

You will need:

■            4 quarts popped corn

■            1 ½ cups sugar

■            ½ cup light corn syrup

■            2 Tablespoon Butter

■            ½ teaspoon salt

■            ¼ teaspoon cream of tartar

■            ¼ teaspoon vanilla

■            1 teaspoon baking soda

■            Pink food coloring (about 1/8 teaspoon)

 

  1. In heavy saucepan on medium heat melt butter then add sugar, corn syrup, cream of tartar and salt. Increase temperature to medium high and bring mixture to a boil, stirring constantly to dissolve sugar.

 

  1. Once mixture boils, add in food coloring and stop stirring. Boil for 5 minutes (Do not stir). Mixture should be about 250-260 degrees. Remove from heat and carefully stir in vanilla and baking soda.

 

  1. Working quickly and while mixture is foamy, pour mixture over popped corn and gently stir to coat popcorn.

 

  1. Place popcorn into a large roaster or rimmed baking sheet (lined with parchment paper or sprayed with cooking spray) and bake at 200° F for 1 hour, stirring every 15 minutes.

Peanut Butter & Nutella Krispy Treats

3 ingredients mixed together for a tasty treat that goes great any time of year. Place 3 Rice Krispies treat bars in a cast iron skillet, and put into the over at 350 degrees for about 3 minutes. Remove from oven, and spoon in about 4 to 5 spoonfuls of peanut butter and mix with the softened treats.

 

Place back into oven for about 5 minutes at 350 degrees. Remove from oven, spread on Nutella, and let cool. Once cooled, slice, and eat.

The Taste of November

November is one of my very favorite months for baking and cooking. Everybody seems to slow down just enough to appreciate comfort food this time of year. One of my favorite things to bake for my family is a traditional pumpkin bread with a twist. It’s the perfect comfort food this time of year!

Over the years I’ve found two tricks that make it even more yummy! Sprinkle a little brown sugar on top of it before you bake it. It adds a tiny sweet crunch AND as soon as you take it out of the oven, immediately wrap it tightly in cling wrap. It keeps it super moist! Add a small amount of cream cheese on top and it’s perfect for breakfast, dessert or after school snack!
